Growing up as a Korean-American, I am often asked how my parents managed to look so young. Asians never do raisins , they claim. In turn, I usually answer with the same response my grandma gave me: it's all the kimchi we eat. This was said to be half in jest, but there is some truth to it. Kimchi has been touted as a skin care superfood for years thanks to its fermented properties, and Koreans swear by it as part of their beauty routine. Beyond the urban legend, recent studies have also linked fermentation to a series of anti-aging benefits.
So, what is fermentation? Fermented skin care and fermented foods mean that microorganisms (bacteria) have been added that release enzymes that break down ingredients. The skin has a hard time absorbing the active ingredients of natural ingredients due to their molecular size, but by breaking down the molecules into smaller sizes, the skin is able to better absorb the beneficial ingredients.
"'Just like fine wine, fermentation is a natural chemical process that uses yeast to secrete enzymes,' says Caroline Chang, M.D., a board-certified dermatologist at the Rhode Island Dermatology Institute. 'The natural process of fermentation creates a higher concentration of beneficial ingredients such as: probiotics , vitamins, antioxidants, and allows these important natural ingredients to become more potent. This not only helps fight free radical damage and protect against UV damage, but also helps in the production of amino acids, the building blocks of peptides to fight fine lines and wrinkles.
Don't worry. I'm not going to ask you to apply kimchi to your face (although I did do something odd for beauty). Fermented beauty products simply refer to the transformation process; in fact, you may already be using it in your skin care routine. Take the example of lactic acid, which is derived from fermented milk. Now, commonly used anti-aging ingredients are being joined by a new wave of products developed by fermenting all kinds of superfoods such as mushrooms, green tea, and horseradish to reap the benefits of this process.
Below are some of my favorite fermented beauty products (applied with copious amounts of kimchi and wine, naturally).
